Rebholz, Riesling Sekt Extra Brut 2017

2/3rds 24-hour skin maceration, 1/3rd whole-cluster pressed. INOX fermented with partial aging in small barrels before tirage. RS not published—blanched almond, apple pastry, cool, chalky minerality. The linear impression of the nose carries over to the palate, with toasted sourdough, Granny Smith apple, and an interesting cherry kernel note lingering on the finish. Exceptionally fine bubbles.
